About Me
Hi, I’m Holly! I was diagnosed with Ulcerative Colitis in 2008 and began to focus on the importance of nutrition a few years later.
I spent far too long stressing over what I was going to eat for each meal, not having anything I can eat in the kitchen when I was hungry, and feeling anxious about learning how to eat completely differently for the sake of my health.
Over time, I learned how to make meal planning simple and stress free.
