As much as I love coffee, it just doesn’t work well for me when I am in an Ulcerative Colitis flare-up and trying to rid my body of all the inflammation. When this happens, I still need something hot and delicious to drink from a mug in the morning, so I turn to my favorite Autoimmune Paleo matcha latte recipe. It’s hot and creamy, with just the right amount of caffeine to perk me up. It tastes so good I sometimes forget that I used to drink coffee in the first place!
Without further ado, here is my favorite matcha latte recipe…
Ingredients
- ½ teaspoon (more if you like a stronger matcha flavor)
- Hot water just off the boil
- Splash of coconut milk
- Dash of cinnamon
- Honey or maple syrup to taste
- 1 scoop collagen peptides powder (optional)
Instructions
- Heat water to a boil, then let sit for about a minute.
- While the water is heating, add the coconut milk, matcha, and collagen to the mug.
- Then pour the hot water over the mixture in the mug. Stir using a whisk.
- Add the honey/maple syrup and cinnamon to taste. Whisk all of the ingredients together.
- Enjoy!
