On Easter Sunday, all I was craving was a stack of gluten free vegan french toast from a restaurant in our neighborhood. I mean–a massive craving! I know they are open for takeout and delivery during quarantine, so I went to order the most fluffy and delicious pancakes only to find that they are not currently serving brunch food. Whaaaaaat? Okay, I do understand the struggle restaurants are facing during COVID-19 so I couldn’t be upset. But my taste buds were still craving something sweet and just a little crisp on the outside.
So I dug into my cabinets and fridge to see what I could scrape together because not just anything would curb this craving–but also I’m super frugal 🙂 so I had to figure something out. I had gluten-free bread and non-dairy milk and a pack of bacon. That’s when it dawned on me–I’ve never tried making gluten-free vegan french toast. Does it even exist? Will it taste good if it does? My egg-free baking experiences have been less than stellar so these are valid questions.
I found a recipe from The Pretty Bee that used all ingredients I already had. BINGO!!! I modified it a bit, so I am sharing the modified version below. However, the original recipe is linked above. Gluten Free Vegan French Toast Recipe
Ingredients
- 1 cup non-dairy milk – I used homemade oat milk, but any kind will do
- 1 tbsp arrowroot powder
- 1 tbsp coconut oil, melted
- 1/2 tsp cinnamon
- pinch salt
- 3 slices gluten-free bread – Used Little Northern Bakehouse brand, but feel free to use another brand
- 3 tbsp grass-fed butter – I used Vital Farms, but you can substitute it for a vegan spread to make this recipe fully vegan
- Topping: 1 cup frozen mixed berries, heated – (microwave or stove top)
Instructions
- Whisk together the non-dairy milk, arrowroot powder, coconut oil, cinnamon, and salt in a container wide enough to fit a piece of bread.
- Melt a pat of butter or vegan spread in a pan.
- Place a piece of bread into the milk mixture and let it soak for 1-2 minutes on both sides.
- When the pan is hot and the butter is melted, place the soaked bread in the pan.
- Once you put the piece of bread in the pan, go ahead and put another piece of bread in the milk bath to soak.
- Keep an eye on the bread in the pan and make sure it isn’t sticking to the bottom of the pan. It may take a while for each side to crisp up, just be patient. After about 5-6 minutes, flip slides. Do this until both sides are crisp and golden brown.
- Repeat this for all pieces of bread.
- Heat the frozen mixed berries in a glass bowl in the microwave until they are warm and there are juices in the bottom of the bowl. You can also heat them in a saucepan on the stove.
- Top the gluten-free vegan french toast with the warmed mixed berries. Other topping ideas: maple syrup, honey, powdered sugar, chocolate chips.
